Boise’s food scene is getting a big summer upgrade! Between now and the end of September, 17 new restaurants, cafés, and bars are opening across the Treasure Valley — from a brand-new outdoor bar right on the river to a beloved Bay Area dumpling spot finally making the move to Boise.
We’ve compiled a full rundown of everything on its way. Here’s everything coming this summer, organized by when you can walk in the door.

Descanso on the Greenbelt
The Boardwalk’s first new concept of the year opens right along the Boise River Greenbelt. Spritzes, beer, wine, and a patio built for sunny summer days.

The Cellars at River’s Edge
The team behind Sol Invictus Vineyard is opening a new wine bar inside a remodeled 1921 farmhouse in Star. The bar is phase one — a speakeasy and event center is planned in the future.

Solovey Kitchen Cafe
If you’ve spent any time on food TikTok, you’ve seen Solovey’s cured and cold-smoked salmon videos (300K+ followers and counting). Founder Dimitriy Solovey is finally going brick-and-mortar in downtown Nampa. Expect coffee, sandwiches built with Solovey’s signature smoked fish, and retail pickup for the at-home crowd.

The STIL + Bumble Coffee
Two Boise favorites under one roof — yes please. The STIL is opening its seventh ice cream shop and pairing up with Bumble Coffee in Eagle, taking over the former Negranti Creamery space. The team also kept most of Negranti’s staff, so expect a familiar welcome with a new menu.

Vessel Kitchen
Utah-based Vessel Kitchen opens its very first Idaho location in the new Hemingway Building in downtown Eagle. The fast-casual brand is known for protein-forward bowls and a fresh, clean menu.

Spitfire Tacos + Tequila
Apex’s second Boardwalk opening lands in early June. It’s the third Idaho location for the spit-fired-meats taco bar (joining the Eagle flagship and McCall). The menu consists of Spitfire’s slow-roasted, smoky proteins that pair perfectly with mezcal and tequila.

Nowadays Coffee
Owners Gail and Jonah Eldfrick are opening a vintage diner-inspired coffee shop in a beautifully restored 1956 building on Chinden. Espresso, teas, local pastries, yard games, and a planned recurring flea market.

Ground Rules
The third Boardwalk concept from Apex opens the weekend of June 10, timed to FIFA World Cup viewing. Planned are a wall of TVs, garage doors that fold open to the plaza. The menu features a sports bar-esque menu, with burgers, beer, bourbon, and wings.

Anderson Prime American Steakhouse
The Anderson Reserve family — Idaho third-generation butchers — are bringing their new steakhouse concept to Star. Two stories, 15,000 square feet, and signature cuts up to $225.

The Smoky Pickle
Wood-fired BBQ plus a pickle bar — inside a converted grain silo. Owner Nate Lindskoog (you may know him from Tower Grill, which he’s been running in Nampa for nine years) is opening with Texas brisket, Santa Maria tri-tip, southern ribs, and a wall of pickles to round it out.

4 new concepts are coming to The Boardwalk complex in Garden City
July
Peregrine Overlook
One more new concept coming to The Boardwalk in Garden City this summer: a fifth-floor rooftop cocktail bar with a circular wood bar, DJ-driven sunset programming, and Boise River views. It will be enclosed in winter for year-round use, and it also has a brand-new event center on the floor below.

Brooker’s Founding Flavors Ice Cream
Utah-based Brooker’s Founding Flavors — a Revolutionary War-themed ice cream chain (you’ll see the theme the second you walk in) — is opening its very first Idaho location at Orchard Park.

Lost River Tavern
Family-style pizza and comfort food on the Boise Bench. Permits filed in February. The Bench is in the middle of a quiet little restaurant renaissance, and this one fits right in.

The 148 Building (Restaurant TBA)
A new three-story mixed-use development in downtown Eagle includes a 3,000-square-foot patio restaurant on the ground floor. The tenant operator hasn’t announced the specific restaurant coming to the space, but stay tuned for more info.

Rev Collective
A three-in-one coffee shop, local market, and all-day food counter on S. Eagle Rd. in Meridian.

Dumpling Time
The Bay Area’s Omakase Restaurant Group is bringing handmade gyoza, bao, xiao long bao, and Xi’an dumplings to The Warehouse Food Hall in BoDo. It’s their first location outside California. This is an extremely popular spot and a big win for Boise.

Trolley House
New owners Amanda Carvalho and Matt Mahaffey are bringing the historic Trolley House on Warm Springs back to life with a dual-concept café and lounge — daytime espresso, sandwiches, and bowls sliding into upscale cocktails in the evening. Dog- and kid-friendly patio included.

Coming Next
Fall and winter already have a few slated locations opening, with The Village at Meridian alone bringing in six major new restaurants between October and the holidays, plus Cactus Southwest in the old P.F.
